Description

A super quick and satisfying vegan burrito wrap, ready in just 10 minutes. Packed with hearty black beans, wholesome brown rice, vibrant fresh veggies, and a tangy lime-cumin dressing, all wrapped in a warm tortilla with a smear of vegan sour cream. Perfect for a speedy, healthy, and delicious meal.

  • 2 large flour tortillas (each about 10 inches/25cm)
  • 1 cup (200g) cooked black beans, drained and rinsed
  • 1/2 cup (100g) cooked brown rice
  • 1/2 cup (100g) corn kernels
  • 1/2 cup (100g) diced tomatoes
  • 1/4 cup (50g) diced red onion
  • 1/4 cup (50g) chopped cilantro
  • 1/4 cup (50g) vegan sour cream
  • 1 tablespoon (15ml) lime juice
  • 1 teaspoon (5g) ground cumin
  • 1/2 teaspoon (2.5g) chili powder
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine black beans, brown rice, corn, tomatoes, red onion, cilantro, lime juice, cumin, chili powder, salt, and pepper. Mix well.
  2. Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side to make them pliable.
  3. Place each tortilla on a flat surface and spread a thin layer of vegan sour cream in the center.
  4. Spoon half of the bean and rice mixture onto the lower third of each tortilla.
  5. Fold the sides of the tortilla inward, then roll tightly from the bottom to enclose the filling.
  6. Serve immediately, or wrap in foil to keep warm.

Notes

  • Meal Prep Tip: Prepare the bean and rice mixture ahead of time and store it in an airtight container in the fridge for up to 3 days. Assemble wraps just before serving.
