  • 1 large head cauliflower, cut into florets
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil the cauliflower florets until tender-crisp, about 8-10 minutes. Drain well.
  3. In a large skillet (oven-safe), combine the heavy cream, cream cheese, garlic powder and half of the cheddar cheese. Cook over medium heat, stirring constantly, until the cheeses are melted and the sauce is smooth.
  4. Add the drained cauliflower to the skillet and stir to coat with the cheese sauce.
  5. Top with the remaining cheddar cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and lightly golden brown.
  7. Let cool slightly before serving.
