Description

Ingredients

1 lb (450g) lean ground beef
2 medium (approx. 500g) sweet potatoes, peeled and diced small
1 (approx. 150g / 1 cup) onion, diced
1 (approx. 150g / 1 cup) bell pepper, chopped
1 tsp garlic powder
1 tsp paprika
1/2 tsp cumin
Salt and pepper to taste
1/2 cup (120ml) beef broth
Fresh parsley for garnish


Instructions

  • Brown the ground beef in a large skillet over medium-high heat, breaking it apart with a wooden spoon. Cook until fully browned, then drain excess fat.
  • Add the diced sweet potatoes, onion, and bell pepper to the skillet. Stir in the garlic powder, paprika, cumin, salt, and pepper, cooking for about 1 minute until fragrant.
  • Pour in the beef broth. Bring to a gentle simmer, then reduce heat to medium-low, cover, and simmer for 10–12 minutes, or until the sweet potatoes are tender.
  • Uncover the skillet and cook for 2 more minutes over medium-high heat to let any remaining liquid reduce and flavors concentrate. Taste and adjust seasoning as needed.
  • Garnish generously with fresh parsley and serve warm.

Notes

Dice sweet potatoes small (approx. 1/2 inch) to ensure they cook quickly and evenly with the beef.
For a spicier kick, add a pinch of red pepper flakes along with the other spices.
If the liquid reduces too much during simmering, add another splash of beef broth or water.
