- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 4 ounces crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the arugula, sliced apples, dried cranberries, chopped walnuts, and feta cheese.
- In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to coat.
