  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt
  • 2 cups peeled and diced apples (such as Honeycrisp or Gala)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 2 tablespoons cold unsalted butter, cut into small pieces
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Combine yogurt with dry ingredients and add to the creamed mixture alternately with the dry ingredients, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced apples and nuts (if using).
  7. In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Pour the batter into the prepared loaf pan and sprinkle the streusel topping evenly over the batter.
  9. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean. If the top starts to brown too quickly, tent it with foil during the last 15-20 minutes of baking.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
