- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup plain yogurt
- 2 cups peeled and diced apples (such as Honeycrisp or Gala)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup all-purpose flour
- 1/4 cup packed light brown sugar
- 2 tablespoons cold unsalted butter, cut into small pieces
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine yogurt with dry ingredients and add to the creamed mixture alternately with the dry ingredients, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the diced apples and nuts (if using).
- In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Pour the batter into the prepared loaf pan and sprinkle the streusel topping evenly over the batter.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean. If the top starts to brown too quickly, tent it with foil during the last 15-20 minutes of baking.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
