- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons unsalted butter
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 8×8 inch baking pan.
- In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Beat until well combined.
- Add the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced apples, 1/4 cup of sugar, and cinnamon. Cook until the apples are tender and slightly caramelized, about 5-7 minutes.
- Pour the brownie batter into the prepared pan. Spread the apple mixture evenly over the top of the brownie batter.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownies cool completely in the pan before cutting into squares.
