  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour

  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 8×8 inch baking pan.
  2. In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Beat until well combined.
  3. Add the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced apples, 1/4 cup of sugar, and cinnamon. Cook until the apples are tender and slightly caramelized, about 5-7 minutes.
  7. Pour the brownie batter into the prepared pan. Spread the apple mixture evenly over the top of the brownie batter.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  9. Let the brownies cool completely in the pan before cutting into squares.
