  • 2 large eggs

  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Beat until well combined.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced apples, sugar, and cinnamon. Cook, stirring occasionally, until the apples are softened and slightly caramelized, about 5-7 minutes.
  7. Pour the brownie batter into the prepared baking pan. Spread evenly.
  8. Spoon the apple topping over the brownie batter, distributing it evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  10. Let the brownies cool completely in the pan before cutting into squares.
