- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup apple cider, reduced to 2 tablespoons
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the reduced apple cider until evenly distributed.
- Drop by rounded tablespoons onto the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden brown.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of apple cider, and cinnamon until smooth. Add more apple cider, 1 teaspoon at a time, until the glaze reaches your desired consistency.
- Once the cookies are completely cool, drizzle the glaze over the top of each cookie. Let the glaze set before serving.
Notes
- Tip: For best flavor, use high-quality, unfiltered apple cider.
- Variation: Add 1/2 cup of chocolate chips for a chocolatey twist.
