  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup finely diced apple (such as Honeycrisp or Fuji)
  • 1 cup (2 sticks) unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 1/2 cup salted caramel sauce (store-bought or homemade)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  6. Gently fold in the diced apple.
  7. Fill each cupcake liner about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool in the muffin tin for 5 minutes, then transfer them to a wire rack to cool completely.
  10. For the frosting: In a large bowl, beat the softened butter until smooth and creamy.
  11. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  12. Add the salted caramel sauce, milk, vanilla extract, and a pinch of salt. Beat until the frosting is smooth and creamy.
  13. Assembly: Once the cupcakes are completely cool, frost them generously with the salted caramel frosting.
  14. Drizzle additional salted caramel sauce on top of the frosting, if desired. Serve and enjoy!
