  • 3 medium apples, peeled and diced
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and lightly flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. Press about two-thirds of the cookie dough into the prepared baking pan to form the base. Set aside the remaining dough for topping.
  5. In a medium bowl, combine the diced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Mix well to coat the apples.
  6. Spread the apple pie filling evenly over the cookie bar base.
  7. Crumble the remaining cookie dough over the apple pie filling.
  8. In a small bowl, combine the melted butter, sugar, and cinnamon. Sprinkle evenly over the crumbled cookie dough.
  9. Bake for 30-35 minutes, or until the topping is golden brown and the apple filling is bubbly.
  10. Let cool completely in the pan before cutting into bars.
