- 3 medium apples, peeled and diced

- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and lightly flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Press about two-thirds of the cookie dough into the prepared baking pan to form the base. Set aside the remaining dough for topping.
- In a medium bowl, combine the diced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Mix well to coat the apples.
- Spread the apple pie filling evenly over the cookie bar base.
- Crumble the remaining cookie dough over the apple pie filling.
- In a small bowl, combine the melted butter, sugar, and cinnamon. Sprinkle evenly over the crumbled cookie dough.
- Bake for 30-35 minutes, or until the topping is golden brown and the apple filling is bubbly.
- Let cool completely in the pan before cutting into bars.
