Ingredients

- 1 1/2 cups (192g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1 cup (245g) pumpkin puree
- 1/2 cup (122g) unsweetened applesauce
- 1/4 cup (60ml) vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (150g) diced apple (peeled and cored)
Oat Topping:
- 1/2 cup (45g) rolled oats
- 1/4 cup (50g) brown sugar
- 1/4 cup (32g) all-purpose flour
- 2 tbsp (28g) melted butter
- 1/2 tsp ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix pumpkin puree, applesauce, vegetable oil, egg, and vanilla extract until combined.
- Stir wet ingredients into dry ingredients until just combined. Do not overmix.
- Fold in diced apple gently.
- In a small bowl, combine oats, brown sugar, flour, melted butter, and cinnamon for the topping.
- Fill muffin cups about 3/4 full with batter. Sprinkle oat topping evenly on top.
- Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer muffins to a wire rack to cool completely.
Notes
- Don’t overmix: This keeps the muffins soft and tender.
- Variations: Add walnuts, pecans, or chocolate chips for extra flavor.
