Ingredients

  • 1/2 cup (100g) granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup (245g) pumpkin puree
  • 1/2 cup (122g) unsweetened applesauce
  • 1/4 cup (60ml) vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (150g) diced apple (peeled and cored)

Oat Topping:

  • 1/2 cup (45g) rolled oats
  • 1/4 cup (50g) brown sugar
  • 1/4 cup (32g) all-purpose flour
  • 2 tbsp (28g) melted butter
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, applesauce, vegetable oil, egg, and vanilla extract until combined.
  4. Stir wet ingredients into dry ingredients until just combined. Do not overmix.
  5. Fold in diced apple gently.
  6. In a small bowl, combine oats, brown sugar, flour, melted butter, and cinnamon for the topping.
  7. Fill muffin cups about 3/4 full with batter. Sprinkle oat topping evenly on top.
  8. Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer muffins to a wire rack to cool completely.
