Soft, chewy, and packed with warm fall flavors, these no-bake Apple Snickerdoodle Protein Bars are the perfect energizing snack or a wholesome pre-workout boost.
Ingredients
1.5 cups (135g) oat flour
1/2 cup (60g) vanilla protein powder
1/2 cup (120g) almond butter
1/4 cup (60ml) honey or maple syrup
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup (60g) dried apple pieces, chopped small
1–2 tbsp almond milk (if needed)
1 tbsp cinnamon sugar (for topping)
Instructions
- Line a loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, combine the oat flour, protein powder, cinnamon, and nutmeg. Whisk until thoroughly mixed.
- Stir in the almond butter and honey (or maple syrup) until a thick, cohesive dough forms. If the dough is too dry or crumbly, add almond milk, one tablespoon at a time, until it comes together.
- Fold in the chopped dried apple pieces, making sure they’re evenly distributed throughout the dough.
- Press the dough firmly and evenly into the prepared loaf pan. Use lightly wet hands if the dough is sticky.
- Sprinkle the top generously with cinnamon sugar.
- Refrigerate for at least 30 minutes to allow the bars to fully set.
- Lift the parchment paper to remove the slab from the pan, then slice into 8 equal bars. Wrap individually for easy grab-and-go snacks.
