A vibrant and satisfying Asian Noodle Salad featuring a medley of crisp vegetables and hearty egg noodles, all coated in a rich, creamy, and irresistible peanut dressing with hints of ginger, garlic, and a touch of spice.
Ingredients
250g / 8.8 oz Asian egg noodles or spaghetti
2 cups / 200g shredded red cabbage
1 cup / 120g shredded carrots
1/2 cup / 60g thinly sliced radishes
1/4 cup / 10g fresh cilantro, chopped
2 green onions, thinly sliced
1 tablespoon / 10g sesame seeds
**For the Peanut Dressing:**
1/2 cup / 120g chunky peanut butter
1/4 cup / 60ml soy sauce
2 tablespoons / 30ml rice vinegar
1 tablespoon / 15ml sesame oil
1 tablespoon / 15ml honey
1 teaspoon grated fresh ginger
1 clove garlic, minced
1/2 teaspoon sriracha sauce or 1/4 teaspoon dried chilli flakes
Instructions
Cook the Asian egg noodles or spaghetti according to package directions until al dente. Drain well.
While noodles cook, prepare the dressing: In a medium bowl, whisk together chunky peanut butter, soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and sriracha until smooth. If too thick, add a splash of warm water.
Transfer the warm, drained noodles to the bowl with the dressing. Toss thoroughly to coat every noodle strand. Set aside to cool.
Thinly slice the red cabbage, carrots, radishes, cilantro, and green onions.
Once the noodles are cooled, add the sliced vegetables to the bowl. Toss everything together until well combined.
Garnish with sesame seeds and serve immediately, or chill for at least 30 minutes for best flavor.
Notes
For best flavor, ensure fresh ginger and garlic are used.
Adjust sriracha to control the desired level of spice.
The salad tastes even better after chilling for a while, allowing flavors to meld.
