3 cups (540g) dried butter beans, soaked overnight
1 tablespoon kosher salt, plus more to taste
1 teaspoon granulated garlic powder
½ teaspoon granulated garlic powder
½ teaspoon black pepper
2 tablespoons olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
4 cups (960ml) chicken broth
1 (4 ounce / 113g) can of diced green chiles, drained
4 tablespoons (56g) butter
1 cup (240ml) heavy cream
Fresh parsley, for garnish


Instructions

  • Drain the soaked butter beans and transfer them to a large stock pot or Dutch oven. Add 8 cups of fresh water, 1 tablespoon salt, and 1 teaspoon granulated garlic powder. Bring to a boil, then reduce heat and simmer for 1½ hours, or until the beans are very soft.
  • While the beans are simmering, heat 2 tablespoons olive oil in a separate skillet. Sauté the diced onion and minced garlic for about 10 minutes, until softened and fragrant. Set aside.
  • Once the beans are fully cooked, drain most of the cooking liquid, reserving about 2 cups. Return the beans to the pot.
  • Add the reserved bean liquid, chicken broth, green chiles, the sautéed onion and garlic mixture, and 4 tablespoons butter to the pot. Stir well to combine.
  • Using an immersion blender, carefully blend about half of the beans to create a creamy texture. Blend less for a chunkier consistency or more for a smoother result. Alternatively, blend in batches using a regular blender, being cautious with the hot liquid.
  • Stir in the heavy cream and simmer for another 15 minutes, allowing the flavors to meld and the mixture to thicken.
  • Taste and adjust seasoning as needed with additional salt, pepper, or garlic powder.
  • Garnish generously with fresh parsley and serve hot.

Notes

Ensure beans are soaked overnight for best results and reduced cooking time.
Adjust the blending time to achieve your preferred creamy or chunky texture.
If reheating, add a splash of broth or water if the beans have thickened too much.
