- 1 pound Italian-style chicken sausage, casings removed
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 9 ounces refrigerated cheese tortellini
- 5 ounces fresh spinach, roughly chopped
- Grated Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the pot and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
- Pour in the chicken broth and diced tomatoes. Stir in the Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the tortellini and cooked sausage to the pot. Cook until the tortellini is tender, about 3-5 minutes.
- Stir in the spinach and cook until it wilts, about 1-2 minutes.
- Serve hot, garnished with grated Parmesan cheese, if desired.

- Substitution: For a vegetarian option, omit the sausage and add more vegetables.
