- 1 tablespoon olive oil
- 1 pound Italian-style chicken sausage, casings removed
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 9 ounces refrigerated cheese tortellini
- 5 ounces fresh spinach, roughly chopped
- Salt and black pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the pot and set aside.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and diced tomatoes. Stir in the dried oregano and red pepper flakes (if using). Bring to a simmer.
- Return the cooked sausage to the pot. Add the tortellini and cook according to package directions, usually about 3-5 minutes, or until tender.
- Stir in the chopped spinach and cook until wilted, about 1-2 minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.
