Ingredients

- 2 ripe avocados (about 300g), halved, pitted, and sliced
- 2 large tomatoes (about 400g), sliced
- 8 oz fresh mozzarella cheese (225g), sliced
- 1/4 cup fresh basil leaves (15g), roughly chopped
- 2 tablespoons extra virgin olive oil (30ml)
- 1 tablespoon balsamic vinegar (15ml)
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the Ingredients: Wash the tomatoes and basil. Slice the tomatoes and mozzarella into even rounds. Slice the avocados.
- Assemble the Salad: Arrange the tomato, mozzarella, and avocado slices on a serving platter, alternating each ingredient. Tuck basil leaves between the slices.
- Make the Dressing: In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar. Season with salt and freshly ground black pepper.
- Drizzle and Serve: Drizzle the dressing evenly over the salad. Serve immediately.
