Ingredients

  • 2 ripe avocados (about 300g), halved, pitted, and sliced
  • 2 large tomatoes (about 400g), sliced
  • 8 oz fresh mozzarella cheese (225g), sliced
  • 1/4 cup fresh basil leaves (15g), roughly chopped
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 tablespoon balsamic vinegar (15ml)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Ingredients: Wash the tomatoes and basil. Slice the tomatoes and mozzarella into even rounds. Slice the avocados.
  2. Assemble the Salad: Arrange the tomato, mozzarella, and avocado slices on a serving platter, alternating each ingredient. Tuck basil leaves between the slices.
  3. Make the Dressing: In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar. Season with salt and freshly ground black pepper.
  4. Drizzle and Serve: Drizzle the dressing evenly over the salad. Serve immediately.
