- 1/2 cup chickpeas, drained and rinsed
- 1 ripe avocado, mashed
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 tbsp lemon juice
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 whole wheat tortillas
- 1 cup mixed greens
Instructions
- In a medium bowl, mash the avocado until smooth.
- Add the chickpeas and lightly mash, leaving some whole for texture.
- Stir in the sun-dried tomatoes, red onion, cilantro, lemon juice, cumin, salt, and pepper. Mix well.
- Lay out the tortillas and evenly distribute the mixed greens among them.
- Spoon the avocado-chickpea mixture onto each tortilla, spreading it evenly.
- Fold the sides of the tortillas inward, then roll tightly from the bottom to form wraps.
- Slice each wrap in half diagonally and serve immediately.
