Ingredients

  • 1/2 cup chickpeas, drained and rinsed
  • 1 ripe avocado, mashed
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lemon juice
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • 1 cup mixed greens

Instructions

  1. In a medium bowl, mash the avocado until smooth.
  2. Add the chickpeas and lightly mash, leaving some whole for texture.
  3. Stir in the sun-dried tomatoes, red onion, cilantro, lemon juice, cumin, salt, and pepper. Mix well.
  4. Lay out the tortillas and evenly distribute the mixed greens among them.
  5. Spoon the avocado-chickpea mixture onto each tortilla, spreading it evenly.
  6. Fold the sides of the tortillas inward, then roll tightly from the bottom to form wraps.
  7. Slice each wrap in half diagonally and serve immediately.
