- 1 medium onion, chopped (150g/1 cup)
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 (17.6 ounce) package gnocchi (500g)
- 1 cup milk
- 1 cup shredded cheddar cheese (120g)
- 1/4 cup grated Parmesan cheese (25g)
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- 1/2 cup diced beef sausage (75g)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
- Pour in vegetable broth and bring to a simmer.
- Add gnocchi and cook according to package directions, usually about 2-3 minutes, or until they float to the surface.
- Reduce heat to low. Stir in milk, cheddar cheese, and Parmesan cheese until cheese is melted and soup is creamy.
- Season with salt and pepper to taste.
- Stir in diced beef sausage and heat through.
- Garnish with fresh parsley before serving.
