Description
A classic dessert with a tropical twist! This Banana Upside Down Cake features a moist cake with a caramelized banana topping.

- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) water
- 4 tablespoons (56g) unsalted butter, cut into pieces
- 3 ripe bananas, sliced
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) buttermilk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium saucepan, combine granulated sugar and water. Cook over medium heat until sugar dissolves, then let it cook until it turns a deep amber color.
- Remove from heat and whisk in the butter until melted and smooth. Pour the caramel into the prepared cake pan, spreading evenly.
- Arrange banana slices over the caramel in a single layer, covering the bottom of the pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour batter evenly over the banana slices in the cake pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate. Be careful, as the caramel will be hot.
- Serve warm and enjoy!
Notes
- Tip: Use ripe but firm bananas for the best results.
- Substitution: If you don’t have buttermilk, use 1/2 cup of milk with 1/2 tablespoon of lemon juice.
