  • 1 cup (240ml) whole milk
  • 1 cup (240ml) heavy cream
  • 1 cup (115g) shredded cheddar cheese
  • 1 cup (115g) shredded mozzarella cheese
  • 1 cup (150g) diced cooked beef
  • 1/2 cup (75g) diced onion
  • 1/2 cup (75g) diced bell pepper
  • 1/2 cup (75g) diced mushrooms
  • 1 tablespoon (15ml) vegetable oil
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2.5g) black pepper
  • 1/4 teaspoon (1.25g) ground nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place pie crust in a 9-inch (23cm) pie dish and crimp edges. Set aside.
  3. In a skillet, heat vegetable oil over medium heat. Add diced onion, bell pepper, and mushrooms. Cook for 5-7 minutes until softened. Add diced cooked beef and cook for another 2 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, whole milk, heavy cream, salt, black pepper, and ground nutmeg until well combined.
  5. Sprinkle half of the shredded cheddar and mozzarella cheese over the bottom of the pie crust.
  6. Spread the cooked vegetable and beef mixture evenly over the cheese.
  7. Pour the egg mixture over the vegetables and beef.
  8. Sprinkle the remaining cheese on top.
  9. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is golden brown.
  10. Let cool for 10 minutes before slicing and serving.
