- 1 pie crust (9-inch/23cm)
- 6 large eggs
- 1 cup (240ml) whole milk
- 1 cup (240ml) heavy cream
- 1 cup (115g) shredded cheddar cheese
- 1 cup (115g) shredded mozzarella cheese
- 1 cup (150g) diced cooked beef
- 1/2 cup (75g) diced onion
- 1/2 cup (75g) diced bell pepper
- 1/2 cup (75g) diced mushrooms
- 1 tablespoon (15ml) vegetable oil
- 1 teaspoon (5g) salt
- 1/2 teaspoon (2.5g) black pepper
- 1/4 teaspoon (1.25g) ground nutmeg
Instructions
- Preheat oven to 375°F (190°C).
- Place pie crust in a 9-inch (23cm) pie dish and crimp edges. Set aside.
- In a skillet, heat vegetable oil over medium heat. Add diced onion, bell pepper, and mushrooms. Cook for 5-7 minutes until softened. Add diced cooked beef and cook for another 2 minutes. Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, whole milk, heavy cream, salt, black pepper, and ground nutmeg until well combined.
- Sprinkle half of the shredded cheddar and mozzarella cheese over the bottom of the pie crust.
- Spread the cooked vegetable and beef mixture evenly over the cheese.
- Pour the egg mixture over the vegetables and beef.
- Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is golden brown.
- Let cool for 10 minutes before slicing and serving.
