- 2 cups (200g) shredded mozzarella cheese
- 2 tablespoons (28g) unsalted butter
Instructions
- Spread basil pesto evenly on one side of each slice of sourdough bread.
- Sprinkle shredded mozzarella cheese on the pesto side of two slices.
- Top with the remaining bread slices, pesto side down, to form two sandwiches.
- Heat a skillet over medium heat and add unsalted butter.
- Once butter is melted, place sandwiches in the skillet.
- Cook for 3-4 minutes per side, until bread is golden brown and cheese is melted.
- Remove from heat, let cool slightly, and serve warm.
