Ingredients

  • 2 lbs cherry tomatoes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz burrata cheese
  • 1/4 cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • 1 loaf crusty bread, sliced and toasted

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss until all tomatoes are evenly coated.
  3. Spread the tomatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20-25 minutes, or until the tomatoes are bursting and slightly caramelized.
  5. While tomatoes are roasting, slice the crusty bread and toast until golden brown.
  6. Remove tomatoes from oven and let cool slightly for 5 minutes.
  7. Arrange the burrata cheese on a serving platter and gently break it open.
  8. Spoon the warm roasted tomatoes and their juices over the burrata.
  9. Drizzle with balsamic glaze and garnish with fresh basil leaves.
  10. Serve immediately with toasted bread slices for dipping.
