- 2 lbs cherry tomatoes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz burrata cheese
- 1/4 cup fresh basil leaves
- 2 tbsp balsamic glaze
- 1 loaf crusty bread, sliced and toasted
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss until all tomatoes are evenly coated.
- Spread the tomatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the tomatoes are bursting and slightly caramelized.
- While tomatoes are roasting, slice the crusty bread and toast until golden brown.
- Remove tomatoes from oven and let cool slightly for 5 minutes.
- Arrange the burrata cheese on a serving platter and gently break it open.
- Spoon the warm roasted tomatoes and their juices over the burrata.
- Drizzle with balsamic glaze and garnish with fresh basil leaves.
- Serve immediately with toasted bread slices for dipping.
