Description

Fluffy, tender, and packed with 20g of protein per serving, these Breakfast Protein Biscuits are a delicious and energizing way to start your day. Easy to make and incredibly satisfying!

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup vanilla protein powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3/4 cup plain Greek yogurt
  • 1/4 cup milk
  • 2 tablespoons honey or maple syrup

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine the Greek yogurt, milk, and honey/maple syrup. Stir until well combined.
  5. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick circle.
  7. Use a biscuit cutter or a knife to cut out biscuits. Place them onto the prepared baking sheet.
  8. Bake for 15-20 minutes, or until golden brown.
  9. Let cool slightly before serving.

Notes

  • Cold Butter is Key: Ensure your butter is very cold for the flakiest biscuits.
  • Don’t Overmix: Overworking the dough can lead to tough biscuits. Mix until just combined.
  • Storage: Store cooled biscuits in an airtight container at room temperature for 2-3 days, or refrigerate for up to 5 days.
  • Freezing: Biscuits can be frozen for up to 3 months. Reheat in the oven.
