  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups (360g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (100g) packed light brown sugar (filling)
  • 2 tablespoons (16g) all-purpose flour (filling)
  • 1/4 cup (60ml) milk (filling)
  • 2 tablespoons (28g) unsalted butter (filling)
  • 1/2 teaspoon vanilla extract (filling)
  • 1 cup (120g) powdered sugar (glaze)
  • 23 tablespoons (30-45ml) milk (glaze)
  • 1/2 teaspoon vanilla extract (glaze)
  • Sprinkles (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. For the Filling: In a medium saucepan, combine the brown sugar, flour, milk, and butter. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a simmer. Remove from heat and stir in the vanilla extract. Let it cool slightly.
  7. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving some space between each cookie.
  8. Use your thumb or the back of a spoon to make an indentation in the center of each cookie.
  9. Fill each indentation with about 1 teaspoon of the brown sugar filling.
  10. Bake for 8-10 minutes, or until the edges are lightly golden brown.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. For the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach your desired consistency.
  13. Once the cookies are completely cool, drizzle the glaze over the tops of the cookies. Sprinkle with sprinkles, if desired.
  14. Let the glaze set before serving.
