- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) packed light brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups (360g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (100g) packed light brown sugar (filling)
- 2 tablespoons (16g) all-purpose flour (filling)
- 1/4 cup (60ml) milk (filling)
- 2 tablespoons (28g) unsalted butter (filling)
- 1/2 teaspoon vanilla extract (filling)
- 1 cup (120g) powdered sugar (glaze)
- 2–3 tablespoons (30-45ml) milk (glaze)
- 1/2 teaspoon vanilla extract (glaze)
- Sprinkles (optional)
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- For the Filling: In a medium saucepan, combine the brown sugar, flour, milk, and butter. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a simmer. Remove from heat and stir in the vanilla extract. Let it cool slightly.
- Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving some space between each cookie.
- Use your thumb or the back of a spoon to make an indentation in the center of each cookie.
- Fill each indentation with about 1 teaspoon of the brown sugar filling.
- Bake for 8-10 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- For the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach your desired consistency.
- Once the cookies are completely cool, drizzle the glaze over the tops of the cookies. Sprinkle with sprinkles, if desired.
- Let the glaze set before serving.
Notes
- Tip: Chill the dough for 30 minutes to prevent spreading.
