For the Frosting:

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Sprinkles (optional)

Instructions

  1. Make the Cookies: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  2. Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. On a lightly floured surface, roll out one disc of dough to about 1/8 inch thickness. Use a cookie cutter or knife to cut out desired shapes (rectangles or circles). Place the cut-out cookies onto the prepared baking sheets. Repeat with the remaining dough.
  4. Bake for 8-10 minutes, or until the edges are lightly golden brown. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  5. Make the Filling: In a medium bowl, cream together the softened butter and brown sugar until smooth. Add the milk, vanilla extract, and salt, and mix until well combined.
  6. Assemble the Cookies: Spread a thin layer of the filling onto half of the cooled cookies. Top with the remaining cookies to create a sandwich.
  7. Make the Frosting: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and creamy. Add more milk if needed to reach desired consistency. Frost the assembled cookies with the prepared frosting. Immediately sprinkle with sprinkles, if desired. Let the frosting set for a few minutes before serving.
