Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. For the filling, in a medium saucepan, combine the softened butter, brown sugar, and milk. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  7. Boil for 1 minute, then remove from heat and stir in the vanilla extract. Let it cool slightly.
  8. Roll out the cookie dough on a lightly floured surface to about 1/8 inch thickness. Cut out rectangles using a knife or cookie cutter.
  9. Place half of the rectangles on the prepared baking sheets. Spread a spoonful of the brown sugar filling onto each rectangle, leaving a small border.
  10. Top with the remaining rectangles, gently pressing the edges to seal. Use a fork to crimp the edges.
  11. Bake for 8-10 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. For the glaze, in a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  13. Dip the cooled cookies into the glaze, or drizzle the glaze over the cookies. Add sprinkles, if desired.
  14. Let the glaze set before serving.
