Description

Sweet and tangy Brussels sprouts roasted to perfection with a maple-mustard glaze. A quick and flavorful side dish!

For the Brussels Sprouts:

  • 1 1/2 pounds (680g) Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Maple-Mustard Glaze:

  • 1/4 cup (60ml) maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts with 2 tablespoons olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and browned, flipping halfway through.
  4. While Brussels sprouts are roasting, whisk together maple syrup, Dijon mustard, apple cider vinegar, 1 tablespoon olive oil, and garlic powder in a small bowl.
  5. Once Brussels sprouts are roasted, transfer them to a bowl and toss with the maple-mustard glaze.
  6. Serve immediately.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Variations: Add a pinch of red pepper flakes for a spicy kick!
