Creamy, spicy, and plant-based Buffalo Chickpea Salad Wraps – a quick and flavorful meal!


Ingredients

  • 400g / 1 can Chickpeas, drained and rinsed
  • 120g / ½ cup Vegan Mayonnaise
  • 60ml / ¼ cup Buffalo Wing Sauce, plus more to taste
  • 2 stalks Celery, finely chopped
  • ¼ medium Red Onion, finely diced
  • 1 medium Carrot, shredded
  • 15g / ¼ cup Fresh Parsley, chopped
  • 1 tbsp Lemon Juice
  • ½ tsp Garlic Powder
  • ¼ tsp Smoked Paprika
  • Salt and Pepper to taste
  • 4 large Tortillas or Wraps of your choice
  • Lettuce Leaves for serving

Instructions

  1. Drain and rinse the chickpeas. Mash with a fork.
  2. Add vegan mayonnaise, buffalo wing sauce, celery, red onion, carrot, parsley, lemon juice, garlic powder, smoked paprika, salt, and pepper. Stir well.
  3. Lay out wraps, add lettuce leaves, and spoon on chickpea salad.
  4. Fold in sides, roll up tightly, and serve!
