Ingredients

- 400g / 1 can Chickpeas, drained and rinsed
- 120g / ½ cup Vegan Mayonnaise
- 60ml / ¼ cup Buffalo Wing Sauce, plus more to taste
- 2 stalks Celery, finely chopped
- ¼ medium Red Onion, finely diced
- 1 medium Carrot, shredded
- 15g / ¼ cup Fresh Parsley, chopped
- 1 tbsp Lemon Juice
- ½ tsp Garlic Powder
- ¼ tsp Smoked Paprika
- Salt and Pepper to taste
- 4 large Tortillas or Wraps of your choice
- Lettuce Leaves for serving
Instructions
- Drain and rinse the chickpeas. Mash with a fork.
- Add vegan mayonnaise, buffalo wing sauce, celery, red onion, carrot, parsley, lemon juice, garlic powder, smoked paprika, salt, and pepper. Stir well.
- Lay out wraps, add lettuce leaves, and spoon on chickpea salad.
- Fold in sides, roll up tightly, and serve!
