A refreshing and healthy Carrot Apple Salad, perfect as a side dish or light snack.
Ingredients

- 4 medium carrots, peeled and grated
- 2 medium apples (such as Fuji or Honeycrisp), cored and diced
- 1/2 cup raisins
- 1/4 cup sunflower seeds
- 1/4 cup mayonnaise
- 2 tablespoons plain yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- Pinch of salt
Instructions
- In a large bowl, combine the grated carrots, diced apples, raisins, and sunflower seeds.
- In a separate small bowl, whisk together the mayonnaise, yogurt, honey, lemon juice, cinnamon, and salt until smooth.
- Pour the dressing over the carrot and apple mixture. Toss gently to combine and coat evenly.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad another toss. Serve chilled.
