Ingredients

  • 4 medium carrots, peeled and grated
  • 2 medium apples (such as Fuji or Honeycrisp), cored and diced
  • 1/2 cup raisins
  • 1/4 cup sunflower seeds
  • 1/4 cup mayonnaise
  • 2 tablespoons plain yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. In a large bowl, combine the grated carrots, diced apples, raisins, and sunflower seeds.
  2. In a separate small bowl, whisk together the mayonnaise, yogurt, honey, lemon juice, cinnamon, and salt until smooth.
  3. Pour the dressing over the carrot and apple mixture. Toss gently to combine and coat evenly.
