Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- Carrot Cake Layer: Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large bowl, combine sugar, oil, eggs, and vanilla extract. Beat until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Stir in carrots and nuts (if using).
- Pour batter into springform pan and spread evenly.
- Cheesecake Layer: Beat cream cheese and sugar until smooth and creamy.
- Add egg, sour cream, and vanilla extract. Beat until well combined.
- Gently pour cheesecake batter over the carrot cake layer.
- Bake for 45-55 minutes, or until set. Cover with foil if browning too quickly.
- Remove, cool, and refrigerate for at least 4 hours, or overnight.
- Creamy Topping: Beat cream cheese and powdered sugar until smooth.
- Add heavy cream and vanilla extract. Beat until light and fluffy.
