- 1/2 cup Almond Milk
- 1/4 cup Maple Syrup
- 1 cup Grated Carrots
- 1/2 cup Crushed Pineapple, Drained
- 1/4 cup Raisins
- 1/4 cup Chopped Walnuts
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Vanilla Extract
- 1/4 tsp Salt
- 1 tsp Baking Powder
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, combine all ingredients. Mix well.
- Pour into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until golden brown and set.
- Cool for 10 minutes before serving. Serve warm, topped with yogurt or maple syrup, if desired.
Notes
- Use freshly grated carrots for best flavor.
- Drain the crushed pineapple well to prevent a soggy bake.
