- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ¼ teaspoon black pepper
- 4 cups vegetable broth
- 2 pounds potatoes, peeled and cubed
- 1 cup milk
- 1 cup shredded cheddar cheese
- ¼ cup chopped fresh parsley
- Salt to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic, dried thyme, dried rosemary, and black pepper. Cook for 1 minute more, until fragrant.
- Pour in vegetable broth and add the cubed potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender in batches and blend until smooth. Return the blended soup to the pot.
- Stir in milk and shredded cheddar cheese. Heat until the cheese is melted and the soup is creamy, stirring constantly.
- Season with salt to taste.
- Garnish with chopped fresh parsley before serving.
