Warm, comforting baked apples filled with a creamy cheesecake filling. Perfect for a cozy dessert!


Ingredients

  • 4 medium apples (Gala, Honeycrisp, or Fuji work well)
  • 2 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground cinnamon
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup almond flour

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Wash and dry the apples. Cut off the top quarter of each apple and set the tops aside. Core the apples, removing the seeds and some of the flesh to create a cavity. Be careful not to cut through the bottom of the apples.
  3. Brush the inside of each apple and the cut apple tops with lemon juice to prevent browning. Drizzle 1/2 tablespoon of maple syrup into each apple. Sprinkle the inside of the apples with cinnamon.
  4. In a medium bowl, beat the softened cream cheese and sugar together until smooth and creamy. Beat in the egg and vanilla extract until well combined. Stir in the almond flour until just combined.
  5. Spoon the cheesecake filling evenly into each apple cavity, mounding it slightly on top.
  6. Place the filled apples on the prepared baking sheet. Arrange the apple tops around the apples on the baking sheet.
  7. Bake for 30-35 minutes, or until the apples are tender and the cheesecake filling is set and lightly golden.
  8. Let the baked apples cool slightly on the baking sheet before serving. Serve warm or at room temperature.
