Ingredients

  • 1 1/2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can (10.75 ounces) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup chopped green onions
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked chicken, cooked rice, cream of chicken soup, milk, sour cream, 1/2 cup of the cheddar cheese, green onions, black pepper, and garlic powder. Mix well.
  3. Heat olive oil in a skillet over medium heat. Add celery and carrots and cook until softened, about 5-7 minutes.
  4. Add the softened vegetables to the chicken and rice mixture and stir to combine.
  5. Pour the mixture into the prepared baking dish.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  8. Let stand for 5-10 minutes before serving.

Notes

  • Make Ahead: Assemble the casserole up to 24 hours in advance and store in the fridge. Add extra baking time if baking from cold.
