  • 1 cup shredded cheddar cheese (115g)
  • 1/2 cup sour cream (120ml)
  • 1/2 cup milk (120ml)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup frozen peas (75g)
  • 1/2 cup diced carrots (75g)
  • 1/4 cup finely chopped onion (30g)
  • 1/4 teaspoon garlic powder (1g)
  • 1/4 teaspoon black pepper (0.5g)
  • 1/4 teaspoon salt (1.5g)
  • 1/2 cup crushed crackers (50g)
  • 1 tablespoon melted butter (15ml)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine cooked rice, chicken, cheese, sour cream, milk, soup, peas, carrots, onion, garlic powder, pepper, and salt. Mix well.
  3. Spread mixture evenly into the baking dish.
  4. In a small bowl, mix crushed crackers with melted butter.
  5. Sprinkle cracker mixture over the casserole.
  6. Bake for 25-30 minutes, or until golden brown and heated through.
  7. Let cool for 5 minutes before serving.
