- 2 pounds (900g) Yukon gold potatoes, peeled and cubed
- 1 tablespoon (15ml) olive oil
- 1 pound (450g) smoked beef sausage, sliced
- 1 packet (1 ounce/28g) ranch dressing mix
- 1/2 cup (120ml) milk
- 4 ounces (115g) cream cheese, softened
- 1 1/2 cups (170g) shredded cheddar cheese, divided
- 1/4 cup (15g) chopped fresh chives, for garnish
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- In a large pot, boil potatoes until tender, about 15-20 minutes. Drain well and return to the pot.
- While the potatoes are boiling, heat olive oil in a large skillet over medium heat. Add smoked beef sausage and cook until browned, about 5-7 minutes. Drain off any excess grease.
- Add ranch dressing mix, milk, and cream cheese to the potatoes. Mash until smooth and creamy.
- Stir in 1 cup of the cheddar cheese and the cooked smoked beef sausage into the mashed potato mixture. Mix well to combine.
- Pour the potato mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar cheese over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the potatoes are heated through.
- Garnish with fresh chives before serving.
Notes
- Make Ahead: Assemble the casserole and store in the fridge for up to 24 hours before baking. Add 10 minutes to the baking time.
