Description

Ingredients

  • 2 pounds (900g) Yukon gold potatoes, peeled and cubed
  • 1 tablespoon (15ml) olive oil
  • 1 pound (450g) smoked beef sausage, sliced
  • 1 packet (1 ounce/28g) ranch dressing mix
  • 1/2 cup (120ml) milk
  • 4 ounces (115g) cream cheese, softened
  • 1 1/2 cups (170g) shredded cheddar cheese, divided
  • 1/4 cup (15g) chopped fresh chives, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large pot, boil potatoes until tender, about 15-20 minutes. Drain well and return to the pot.
  3. While the potatoes are boiling, heat olive oil in a large skillet over medium heat. Add smoked beef sausage and cook until browned, about 5-7 minutes. Drain off any excess grease.
  4. Add ranch dressing mix, milk, and cream cheese to the potatoes. Mash until smooth and creamy.
  5. Stir in 1 cup of the cheddar cheese and the cooked smoked beef sausage into the mashed potato mixture. Mix well to combine.
  6. Pour the potato mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar cheese over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the potatoes are heated through.
  8. Garnish with fresh chives before serving.

  • Make Ahead: Assemble the casserole and store in the fridge for up to 24 hours before baking. Add 10 minutes to the baking time.
