Description

A creamy, cheesy, and smoky casserole with potatoes and sausage, perfect for a comforting and easy meal.


Ingredients

  • 2 lbs Yukon gold potatoes, cubed
  • 1 tbsp olive oil
  • 1 lb smoked beef sausage, sliced
  • 1 packet ranch dressing mix
  • 1/2 cup milk
  • 4 oz cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh chives or green onions, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Bake for 20-25 minutes, or until the potatoes are tender and slightly browned.
  5. While the potatoes are baking, cook the sliced smoked beef sausage in a large skillet over medium heat until browned, about 5-7 minutes. Drain any excess grease.
  6. In a large bowl, combine the baked potatoes and cooked sausage.
  7. In a separate small bowl, whisk together the ranch dressing mix and milk. Stir in the softened cream cheese until smooth.
  8. Pour the ranch dressing mixture over the potato and sausage mixture. Stir to combine.
  9. Add 1 cup of the shredded cheddar cheese to the potato mixture and stir to combine.
  10. Transfer the mixture to a 9×13 inch baking dish.
  11. Top with the remaining 1/2 cup of shredded cheddar cheese.
  12. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  13. Garnish with chopped fresh chives or green onions before serving.
