- 2 lbs Yukon gold potatoes, cubed
- 1 tbsp olive oil
- 1 lb smoked beef sausage, sliced
- 1 packet ranch dressing mix
- 1/2 cup milk
- 4 oz cream cheese, softened
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup chopped fresh chives or green onions, for garnish
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 20-25 minutes, or until the potatoes are tender and slightly browned.
- While the potatoes are baking, cook the sliced smoked beef sausage in a large skillet over medium heat until browned, about 5-7 minutes. Drain any excess grease.
- In a large bowl, combine the baked potatoes and cooked sausage.
- In a separate small bowl, whisk together the ranch dressing mix and milk. Stir in the softened cream cheese until smooth.
- Pour the ranch dressing mixture over the potato and sausage mixture. Stir to combine.
- Add 1 cup of the shredded cheddar cheese to the potato mixture and stir to combine.
- Transfer the mixture to a 9×13 inch baking dish.
- Top with the remaining 1/2 cup of shredded cheddar cheese.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh chives or green onions before serving.

- Storage: Store leftovers in the fridge for up to 4 days.
