  • 1 pound Wright Brand Naturally Smoked Applewood chicken Bacon, cooked and crumbled, reserve 1/2 cup for topping
  • 1 large yellow onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 2 cloves garlic, minced
  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 2 cups shredded cheddar cheese, divided
  • 12 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9×13 inch baking dish.
  2. Cook bacon until crisp. Reserve 1/2 cup of the bacon for topping.
  3. In a large skillet, sauté onion, red pepper, and garlic until softened, about 5 minutes. Stir in the potatoes and cook for another 5 minutes, stirring occasionally.
  4. Remove from heat and stir in the cooked bacon (reserve 1/2 cup for topping) and 1 1/2 cups of the cheddar cheese.
  5. Pour mixture into the prepared baking dish.
  6. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  7. Pour egg mixture over the potato mixture in the baking dish.
  8. Top with remaining 1/2 cup cheddar cheese and reserved bacon.
  9. Bake for 50-60 minutes, or until eggs are set and casserole is golden brown.
  10. Let stand for 10 minutes before serving.
