- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 (16 ounce) package potato gnocchi
- 1 cup chopped turkey substitute
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken with salt and pepper and add it to the pot. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
- Add the celery, carrots, and garlic to the pot and cook until softened, about 5 minutes.
- Pour in the chicken broth and bring to a boil. Add the gnocchi and cook according to package directions, about 2-3 minutes.
- Stir in the cooked chicken and turkey substitute. Reduce heat to low and stir in the milk and cheddar cheese until the cheese is melted and the soup is creamy.
- Garnish with fresh parsley and serve hot.
