- 1 lb (450g) boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 bell pepper (any color), chopped
- 1 (15 oz/425g) can black beans, rinsed and drained
- 1 (15 oz/425g) can corn, drained
- 1 cup (180g) long-grain rice, uncooked
- 2 cups (475ml) chicken broth
- 1 packet (1 oz/28g) taco seasoning
- 1 cup (115g) shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado, cilantro
Instructions
- Step 1: Dice the chicken breasts. Heat olive oil in a skillet, sauté onion and bell pepper.
- Step 2: Add chicken and taco seasoning, cook until browned.
- Step 3: Stir in black beans, corn, rice, and chicken broth. Bring to a boil, then simmer for 20–25 minutes.
- Step 4: Sprinkle with cheddar cheese and broil for 2–3 minutes until melted.
- Step 5: Serve with your favorite toppings!
