- 400g / 1 can Chickpeas, drained and rinsed
- 2 medium Bell Peppers, sliced
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 2 tbsp Soy Sauce (or Tamari)
- 1 tbsp Sesame Oil
- 2 tbsp Vegetable Broth
- 1 tsp Ginger, grated
- ½ tsp each of Smoked Paprika, Cumin, and Coriander
- 2 Green Onions, thinly sliced, for garnish
- 1 tbsp Sesame Seeds, for garnish
- 1 tbsp Cooking Oil (vegetable or canola)
Instructions
- Heat cooking oil in a large skillet over medium-high heat. Sauté onion until softened. Add garlic and ginger, cook until fragrant.
- Add bell peppers and stir-fry until tender-crisp.
- Add chickpeas, smoked paprika, cumin, and coriander. Stir well to combine.
- Pour in soy sauce and vegetable broth. Simmer until sauce thickens slightly.
- Remove from heat, drizzle with sesame oil. Garnish with green onions and sesame seeds. Serve immediately.
