  • 1 medium zucchini, grated and squeezed to remove excess moisture
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, lightly beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil (for frying)
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, mash the chickpeas with a fork or potato masher. Add zucchini, parsley, cumin, garlic powder, salt, pepper, egg, and flour. Mix well.
  2. Heat olive oil in a skillet over medium heat. Scoop 2 tablespoons of mixture per fritter, flatten, and cook 3-4 minutes per side until golden brown.
  3. Transfer cooked fritters to a paper towel-lined plate.
  4. For the dip, mix yogurt, lemon juice, lemon zest, garlic powder, and salt until smooth.
  5. Serve warm with the lemon yogurt dip on the side.
