- 1 medium zucchini, grated and squeezed to remove excess moisture
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder

- 1/4 teaspoon black pepper
- 1 egg, lightly beaten
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil (for frying)
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher. Add zucchini, parsley, cumin, garlic powder, salt, pepper, egg, and flour. Mix well.
- Heat olive oil in a skillet over medium heat. Scoop 2 tablespoons of mixture per fritter, flatten, and cook 3-4 minutes per side until golden brown.
- Transfer cooked fritters to a paper towel-lined plate.
- For the dip, mix yogurt, lemon juice, lemon zest, garlic powder, and salt until smooth.
- Serve warm with the lemon yogurt dip on the side.
