Ingredients

  • 400g / 1 can chickpeas, drained and rinsed
  • 1 medium apple, diced
  • 100g / ½ cup dried cranberries
  • 2 celery stalks, diced
  • ¼ cup red onion, finely chopped
  • 50g / ¼ cup walnuts or pecans, chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup or agave
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Dice the apple, celery, and red onion. Chop the walnuts or pecans.
  2. In a small bowl, whisk together the olive oil, lemon juice, maple syrup, Dijon mustard, salt, and pepper.
  3. In a large bowl, combine the chickpeas, apple, dried cranberries, celery, red onion, walnuts or pecans, and parsley.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Serve immediately or chill for later.
