Ingredients

- 400g / 1 can chickpeas, drained and rinsed
- 1 medium apple, diced
- 100g / ½ cup dried cranberries
- 2 celery stalks, diced
- ¼ cup red onion, finely chopped
- 50g / ¼ cup walnuts or pecans, chopped
- 2 tablespoons fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup or agave
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Dice the apple, celery, and red onion. Chop the walnuts or pecans.
- In a small bowl, whisk together the olive oil, lemon juice, maple syrup, Dijon mustard, salt, and pepper.
- In a large bowl, combine the chickpeas, apple, dried cranberries, celery, red onion, walnuts or pecans, and parsley.
- Pour the dressing over the salad and toss gently to coat.
- Serve immediately or chill for later.

- Make Ahead: Prepare the salad a day in advance, but store the dressing separately.
