- 1 large apple, cored and diced (about 200g)
- 1/2 cup shredded carrots (about 50g)
- 1/4 cup chopped red onion (about 30g)
- 1/4 cup mayonnaise
- 2 tablespoons honey mustard
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: 1/4 cup chopped fresh parsley for garnish
Instructions
- Prep: Rinse and drain the chickpeas. Dice the apple.
- Combine: In a large bowl, mix chickpeas, apple, carrots, and red onion.
- Make Dressing: In a small bowl, whisk together mayonnaise, honey mustard, vinegar, olive oil, salt, and pepper.
- Toss: Pour dressing over the slaw and toss well to coat.
- Garnish: Top with fresh parsley if desired and serve.
