Ingredients

  • 2 medium avocados, ripe but firm, diced
  • 1 large mango, ripe, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 3 tablespoons lime juice, freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon chili powder
  • 1 teaspoon honey or maple syrup (optional)
  • Salt & pepper to taste

Instructions

  1. Whisk: In a small bowl or jar, whisk together lime juice, olive oil, chili powder, honey (if using), salt, and pepper until well combined.
  2. Mix: In a large bowl, combine chickpeas, avocado, mango, red onion, cilantro, and jalapeño (if using).
