Description

A refreshing and protein-packed twist on the classic Caprese salad with chickpeas, mozzarella, and tomatoes.


Ingredients

  • 400g / 1 3/4 cups Chickpeas, drained and rinsed
  • 250g / 8 oz Fresh Mozzarella Balls, small or bite-sized
  • 250g / 1 pint Cherry Tomatoes, halved
  • 1/4 cup Fresh Basil, roughly chopped
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • Salt to taste
  • Black Pepper to taste

Instructions

  1. Combine chickpeas, cherry tomatoes, mozzarella balls, and fresh basil in a large mixing bowl.
  2. In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Serve immediately or refrigerate until ready to serve.
