Ingredients

- 400g / 1 3/4 cups Chickpeas, drained and rinsed
- 250g / 8 oz Fresh Mozzarella Balls, small or bite-sized
- 250g / 1 pint Cherry Tomatoes, halved
- 1/4 cup Fresh Basil, roughly chopped
- 3 tablespoons Extra Virgin Olive Oil
- 2 tablespoons Balsamic Vinegar
- Salt to taste
- Black Pepper to taste
Instructions
- Combine chickpeas, cherry tomatoes, mozzarella balls, and fresh basil in a large mixing bowl.
- In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly.
- Serve immediately or refrigerate until ready to serve.
