Ingredients

- 1 cup frozen corn, thawed
- 1 pint cherry tomatoes, halved
- 4 ounces feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil leaves, chopped
- Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, corn, tomatoes, feta, red onion, and basil.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper.
- Pour dressing over salad and toss gently.
- Serve immediately or chill for later.
