Ingredients

  • 1 cup frozen corn, thawed
  • 1 pint cherry tomatoes, halved
  • 4 ounces feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil leaves, chopped
  • Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, corn, tomatoes, feta, red onion, and basil.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper.
  3. Pour dressing over salad and toss gently.
