Description

A vibrant and refreshing Chickpea Strawberry Spinach Salad perfect for a light lunch or a healthy side dish.


Ingredients

  • 250g / 1 cup chickpeas, canned, drained, and rinsed
  • 200g / 1.5 cups strawberries, hulled and sliced
  • 1/4 medium red onion, thinly sliced
  • 60g / 1/2 cup feta cheese, crumbled (optional)
  • 60ml / 1/4 cup balsamic vinaigrette
  • 30g / 1/4 cup toasted almonds, slivered or chopped

Instructions

  1. Rinse the spinach and pat dry.
  2. In a large bowl, combine spinach, chickpeas, strawberries, red onion, and feta cheese (if using).
  3. Pour balsamic vinaigrette over the salad. Toss gently.
  4. Sprinkle with toasted almonds and serve immediately.
