Ingredients

- 170g / 6 ounces spinach, fresh
- 250g / 1 cup chickpeas, canned, drained, and rinsed
- 200g / 1.5 cups strawberries, hulled and sliced
- 1/4 medium red onion, thinly sliced
- 60g / 1/2 cup feta cheese, crumbled (optional)
- 60ml / 1/4 cup balsamic vinaigrette
- 30g / 1/4 cup toasted almonds, slivered or chopped
Instructions
- Rinse the spinach and pat dry.
- In a large bowl, combine spinach, chickpeas, strawberries, red onion, and feta cheese (if using).
- Pour balsamic vinaigrette over the salad. Toss gently.
- Sprinkle with toasted almonds and serve immediately.

- Vegan Option: Omit the feta cheese.
