Ingredients

- 200g / 7 oz fresh spinach
- 400g / 1 can chickpeas, rinsed and drained
- 250g / 1 cup strawberries, hulled and sliced
- 1/4 medium red onion, thinly sliced
- 100g / 1/2 cup feta cheese, crumbled (optional)
- 60ml / 1/4 cup balsamic vinaigrette
- 15ml / 1 tablespoon olive oil
- 15ml / 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse spinach and place in a large bowl.
- Add chickpeas, strawberries, and red onion.
- Whisk together olive oil, lemon juice, salt, and pepper (or use balsamic vinaigrette).
- Pour dressing over salad and toss gently.
- Crumble feta cheese over the top (optional).
- Serve immediately.
