Description

A vibrant and refreshing salad combining chickpeas, strawberries, and spinach with a tangy dressing. Perfect for a light lunch or side dish!


Ingredients

  • 200g / 7 oz fresh spinach
  • 400g / 1 can chickpeas, rinsed and drained
  • 250g / 1 cup strawberries, hulled and sliced
  • 1/4 medium red onion, thinly sliced
  • 100g / 1/2 cup feta cheese, crumbled (optional)
  • 60ml / 1/4 cup balsamic vinaigrette
  • 15ml / 1 tablespoon olive oil
  • 15ml / 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse spinach and place in a large bowl.
  2. Add chickpeas, strawberries, and red onion.
  3. Whisk together olive oil, lemon juice, salt, and pepper (or use balsamic vinaigrette).
  4. Pour dressing over salad and toss gently.
  5. Crumble feta cheese over the top (optional).
  6. Serve immediately.
